RECIPES

All recipes provide 4 servings.

  • CHICKEN NORDSTROM 

INGREDIENTS

 4 organic boneless chicken breasts

 1 can of organic stewed tomatoes

1/2 jar of organic tomato sause

1 box fresh organic mushrooms

1 bag fresh organic spinach

3 tablespoons minced garlic

Italian seasoning to flavor

salt & pepper to flavor

1/4 cup red wine

olive oil or olive oil Pam spray

( sweeten with 1 tablespoon of sugar or brown sugar splenda if needed.)

Fresh grated parm

fresh basil leaves

Season chicken breasts with s&p.  Sous vide or bake chicken breasts at 350 until the center is 165 degrees. 

In a sause pan, saute garlic and mushrooms in olive oil until soft & brown. Olive oil spray works for this quite well. Add stewed tomatoes, tomato sauce and red wine. Stir. Add Italian seasoning and s&p to taste. 

If its not sweet enough add your desired sweetener but go easy on that. Once the sauce has simmered a bit add spinach to top of sauce, cover pan and steam spinach over sauce. Pour over chicken. Serve with fresh grated parm & fresh basil.



EASY PESTO- MANGO CHICKEN

INGREDIENTS

4 Boneless Organic chicken breasts

1 jar/ container of pesto sauce

1/2 mango, cut into tiny bites

1 small bunch cilantro, chopped, without stems

1 cup yellow or white onion cut into tiny pieces

a few black olives chopped (optional)

Key Lime Juice to taste.

S & P

In a bowl mix fruit, onions, cilantro with key lime juice. Let sit while cooking chicken breasts. Season chicken with S & P. Sous vide or bake chicken at 350 degrees until 165 in the center..

Coat with alittle pesto while cooking. Remove chicken from oven, add more pesto sauce and cove with mango mix. Bake for another 5 minutes at 200-250 degrees, or until warm. 

BALSAMIC PORK TENDERLOIN

INGREDIENTS

1 whole plain pork tenderloin 

unsweetened balsamic vinegar, 

(also tastes great with unsweetened teriyaki sauce)

1 teaspoon raw honey or splenda brown sugar

1 tablespoon minced garlic

1 chopped yellow or white onion

1 pack organic mushrooms (optional)

Marinate tenderloin in balsamic vinegar & honey for 1-2 hours in the fridge. Sous vide or bake tenderloin as directed on package. 

Once fully cooked, saute garlic,  onions & mushrooms in more balsamic. Add tenderloin and sear on both sides. 


SHRIMP SCAMPI & ZOODLES

INGREDIENTS

Ribboned or spiralized zucchini. if spiralizing on your own, consider one zucchini per person. Its best to use ribbons rather than skinny noodles. 

7-9 jumbo, deveined shrimp 

ONLY CHOOSE WILD SHRIMP FROM THE UNITED STATES!

3 Tablespoons minced garlic

1 chopped yellow onion

olive oil

1 can chicken broth

1/2 cup white wine

italian seasoning to taste

S&P to taste

red pepper flakes to taste

fresh basil

fresh grated parm.

1 tablespoon real butter.

Saute onions and garlic in olive oil Once the onions are caramelized add white wine and simmer. Then add chicken broth and butter. Add seasoning. Simmer. Add ribboned zoodles and cover. Steam for about 3 minutes, until zoodles are soft. Add shrimp  and cook for another minute, turning shrimp to make sure they cook. Always add shrimp last or they could get tough.

Flavor with fresh parm, basil and red pepper flakes.


ORCHID ISLAND SHRIMP WITH SWEET ITALIAN SAUSAGE

INGREDIENTS:  12 - 24 oz bag of large/ jumbo peeled & deveined shrimp. Assume 6-9 shrimp per person.

6 sweet Italian sausage

3 tablespoons minced garlic

4 colorful bell peppers (sliced)

1 large onion (sliced)

1/4 cup white wine

1-2 cups chicken broth

1 can organic stewed tomatoes or box of fresh diced tomatoes.

1/2 cup vodka sauce ot 1/4 cup cream to thicken

Italian seasoning

salt, pepper

large bunch of fresh basil

freshly grated parmesan

 1 large spaghetti squash.

Bake or grill sausage separately.

Bake spaghetti sqaush and set aside. 

Saute garlic, onions and peppers until well cooked. Add 1/2 bunch fresh basil white wine. cook down a bit. Add Italian seasoning and stewed tomatoes. Simmer. Then add chicken broth. Simmer and add Vodka sauce or cream.  

Serve with the leftover fresh basil and parmesan cheese on the side.
